Monosodium glutamate and health.
Monosodium glutamate (MSG), the sodium salt of glutamic acid produced naturally by Corynebacterium glutanicum, is a non-essential amino acid used to enhance the flavor of foods, sauces, fried foods, red meats and poultry. Its association with a group of clinical features (neck numbness, headache, nausea, vomiting, diaphoresis, palpitations, flushing) has been described since 1968. Similarly, a weak association has been demonstrated with chronic urticaria with angioedema, allergic rhinitis and bronchial asthma, headache, flushing, sweating, facial pressure or tightness, numbness, tingling or burning in the face, neck and other areas, rapid and accelerated heartbeats (heart palpitations), chest pain, nausea and weakness.

A study conducted in rats by researchers from the Universidad del Litoral, Argentina, revealed that the consumption of MSG increased body weight, BMI, abdominal circumference and retroperitoneal fat. The rats presented alterations in glucose tolerance, hyperinsulinemia with insulin resistance and dyslipidemia. The levels of triglycerides and hepatic glycogen were significantly higher. The histological evaluation showed that MSG induces different degrees of degeneration, inflammation and hyalinization in hepatocytes. The intake of MSG exerted effects on the metabolism of carbohydrates and lipids, without important changes in the oxidative state but with induction of alterations in the hepatic histology
